Here are the handouts from my recent presesentation at Streaming Media West in LA. Here's the description.
Learn the technological fundamentals behind encoding both H.264 and WebM formats for playback with the HTML5 <video> tag. Learn the basics of H.264 and WebM encoding and how to produce it for HTML5 distribution. In addition, see how the various H.264 and WebM encoding tools compare in regard to performance, quality, and features.

Hi,
I really liked the presentation, especially when to use VBR vs CBR which I thought was really useful. And information on how to use B frames which I've tended not to use because I haven't seen much difference with MPEG4 (including AVC) but I found they were essential for MPEG2. I'll probably give that another shot using some of the settings in the presentation.
I've attached a short video that I encoded using H264. The settings I used pretty much came out experience and some research but also a lot of testing. That video and others on my site were shot on a consumer HD (1920x1080i) camera, edited in Media Composer 5 and then encoded to H264 at 5Mbits/sec. The de-interlacing was done in Sorenson and I also scaled them in there too from 1920x180i to 1280x720p. There are mobile versions available but I didn't encode them as Vimeo does them for you.
Regards
Mohammed
